My husband is on a strict keto non-dairy diet; he needs to be filled up and is limiting his carbs. But.. I really wanted to make him a treat on our 19th wedding anniversary, so I tried to make this soft cookie / brownie. Just in case I made a simple non-dairy ganache to go with it to add sweetness but he didn't need to use it! Full disclosure: I have not tried this treat yet!

Recipe for Chocolate Poppyseed Brownies


1: Ingredients


Main Ingredients
  • 3/4 cup (80 grams) cashews

  • 1/4 cup (30 grams) walnuts

  • 1 cup hemp seed hearts (140 grams)

  • 1/4 cup (35 grams) unsweetened cocoa powder

  • 1/4 tsp salt

  • 2 Tbsp maple syrup

  • 1 Tbsp water

  • 3/4 tsp vanilla extract

Topping (optional)

2: Directions

  1. Food process the cashews and walnuts until very fine

  2. Add hemp seed hearts, cocoa and salt and food process again

  3. Add maple syrup, water and vanilla and blend / food process

  4. Try to form a little bit into a ball and if it's too dry add another tablespoon of water

  5. Put on wax paper and put another sheet of wax paper on top and roll into desired thickness (Alternatively form into balls, place on wax paper, put another wax paper on top, push down)

  6. Place on a plate and put in freezer for 2 hours minimum
