Sufganiyot (Hanukkah doughnuts)

These Sufganiyot fall under the category of "and more" in the lesssugarandmore.com website. But, they do have much less sugar than most doughnuts. Also, the fat inside the doughnut itself is from yogurt only. But... They are deep fried in oil, to celebrate the wonderful holiday of Hanukkah!

Tips


Yogurt selection - I like using a yogurt that is not greek yogurt, such as this whole milk yogurt.


Frying tips - if you are using a pot on the stove prepare that the temperature will drop once you add the dough. Start by not frying too many so the oil temperature will not drop drastically. Our deep fryer has two baskets, which is very nice for timing purposes, especially when making large batches, like the one this recipe calls for.

Recipe for Sufganiyot (Hanukkah doughnuts)


Makes enough doughnuts for about 25 people


1: Ingredients


Main Ingredients
  • 4 extra large eggs

  • 1/2 cup sugar

  • 4 cups yogurt

  • 4 tsp vanilla extract

  • 1 tsp lemon juice

  • 5 cups flour

  • 5 tsp baking powder

  • 1/2 tsp salt

Lots of canola oil for deep frying


Topping
  • Powdered sugar (optional)

  • Sprinkles (optional)

  • Chocolate syrup or filling

  • Shredded coconut (optional)

2: Directions

  1. Whisk eggs in mixer or by hand

  2. Add remainder of ingredients in order and stir after each one, add flour slowly

  3. Let rest for one hour minimum (if more than two hours move to refrigerator)

  4. Add by spoonful to fryer or pot set to 340~350°F and fry for two minutes per side

  5. Remove with strainer ladle or wire basket and put on paper towels to blot excess oil





3: Mix it up

You may try substituting a little bit of whole wheat flour for the all purpose flour


4: Serving suggestion

Serve with various toppings such as powdered sugar, chocolate spread, and jam. Great with a homemade hot cocoa


5: Storage

Best served fresh but may be left at room temperature until the next day. They may be frozen for longer too.
