
Aren't those Starbuck egg bites so great? I love them! And so much protein! But they do give me some heartburn... so I sought out to make a less greasy version. Still, no added sugar. And still, tons of protein. The fats here are cottage cheese and greek yogurt. Also, I added more spinach than Starbucks for extra iron, especially important for vegetarians. These egg bites are so yummy and work great for those of you that meal plan too!

Equipment and Tools
Oven
Food processor (recommended) - I love my Braun food processor. I recommend Braun because I have one and have owned it for over 15 years. If you don't have a food processor you can still make these egg bites but it will take you longer and they will not be as smooth; yet they will be still be delicious! See tips section if you do not have a food processor.
Tips
Eggs - If you do not have Jumbo eggs use 8 large eggs. I like using jumbo eggs because there are fewer eggs to crack!
Yogurt - Use either non fat or low-fat (2%)
Cottage cheese - We loooove Good culture cottage cheese at this household. No weird chemicals, and delicious!
Sous vide - If you know how to use your sous vide function on your instant pot this will be a great recipe to make in your instant pot! But... I don't know how to use it yet. Stay posted for directions on making these Starbuck copycat bites on your instant pot too
Hot Sauce - We like Franks! It's a great price on Amazon.
Vegan option - We have never tried this but you can try to substitute the eggs with flax eggs. To make a flax egg mix 1 Tbsp flax with 3 Tbsp water and let the mixture sit for a few minutes. Let us know in the comments how this turned out!
No food processor option - Chop the onion and spinach finely with a knife and whip the eggs up either in a stand up mixer, blender or with a fork. Do the same with the cottage cheese. Then, blend all the ingredients together.
Baking - Since these egg bites are low fat I recommend using muffin tins because they are a bit hard to remove from pan, even if using nonstick spray. The ones I recommend are technically parchment baking cups and do not require greasing.
Time Saving Tips
To egg bite or not to egg bite... You can use a casserole dish or regular pan instead of a muffin tin pan to save time. In this case, increase baking time. The smaller the pan the longer the time, because the casserole will be thicker and take longer to bake. Start by adding 5-10 minutes
Electric pot - Everyone. Everyone. Everyone in Europe has an electric pot. They are such time savers in comparison to heating water up on the stove top. Here is an example of one so you know what to look for when shopping for one yourself. This one is very pretty but a little heavier and this one is lighter so it's easier to lift.
Seasoning Mix may be prepared in advance. Cover and leave at room temperature.
Meal Planning Tips
Reheat in microwave, toaster oven, or air fryer. These egg bites are also good served at room temperature.
Great in school lunches

Recipe for healthy vegetarian Starbucks copycat egg bites
1: Ingredients
Main Ingredients
1 1/2 oz fresh spinach leaves
6 jumbo eggs
3/4 cup nonfat greek yogurt
1/4 cup low-fat cottage cheese
3/4 tsp hot sauce
Seasoning Mix
2 Tbsp corn starch
1/2 tsp salt
1/8 tsp black pepper

2: Directions
Boil water in an electric pot or kettle
Set an oven rack in the middle position and another one underneath it in the lowest position
Place a deep baking sheet on the bottom rack of the oven and fill it ~halfway with near boiling water. Be careful when performing this step.
Chop spinach in food processor
Add eggs and mix on high speed (with spinach already in there)
Add greek yogurt and cottage cheese and blend on high speed
Add hot sauce and seasoning mix and blend on medium speed
Preheat the oven to 300°F.
Place muffin tins in muffin pans and spray with cooking oil
Pour mixture evenly into 12 muffin tins
Top with chopped green onion
Bake for 25 minute.
Let cool for 5-10 minutes and remove
3: Mix it up
Extra protein and extra fun - If seeking extra protein you can add sunflower seeds or gruyere cheese to some of the egg bites
4: Serving suggestion
Add your favorite toppings, for example green onions or sunflower seeds as you see pictured.

5: Storage
After egg bites cool put in covered storage container. Store in refrigerator up to five days. Best at room temperature but you can also microwave. For crispier dryer texture heat in toaster oven or air fryer.
